Knowing next to nothing about Burmese food, [Mandalay] is a glorious revelation. Autobiography, history and recipes all rolled into one magnificent whole.
A brilliant, beguiling book.

MANDALAY: Recipes and Tales From a Burmese Kitchen

A glorious collection of 80 irresistible dishes seamlessly interwoven with family stories and insights into Burmese culture.

“There is so much to love in MiMi Aye's wonderful Mandalay” - Nigella Lawson

The food of Burma is little known in the UK but author MiMi Aye sets out to change that within the pages of this exciting new book, revealing the influences, ingredients and special techniques that make Burmese food a delicious triumph of balance in both flavour and texture.

British-born to Burmese parents, in Mandalay MiMi writes about Burma’s culture and history, while sharing family stories and tales from her own travels that take the reader on a culinary journey and provide a fascinating context that brings the recipes to life.

Beginning with a look at the ingredients that makes Burmese food unique – as well as suitable alternatives – MiMi goes on to discuss special techniques, the equipment used and the influence of Burma’s neighbours Thailand, India and China on its cuisine, before delving into chapters such as fritters, rice and noodles, salads, meat, fish and sweet snacks.

Also featuring a menu planner themed by occasion (such as party or casual) and diet (taking in both vegetarian and vegan), within these pages readers will discover a selection of wonderful recipes that will allow them to create a mouth-watering taste of Burma in their own kitchens.
